7 Days to Die has a ton of customizable settings you can play around with when you create your server. Of these choices, you have six different difficulties that will change how challenging the server is to play on. Especially if it's your first time setting up a server, it can be a bit overwhelming to figure out which one is the best to choose, since each difficulty setting will dramatically change how you approach zombies and your survival tactics.
