Understanding is one of the five social stats in Persona 4 Golden, and unlike Knowledge, it is really only used for finishing certain social links. Not only does finishing a social link let you see the entire character's story, but you'll also be able to fuse very powerful Personas along with getting a lot of XP when fusing Personas of that Arcana.
