Disney Dreamlight Valley has a wide variety of gemstones to collect, sell, and gift to villagers in the valley. They are also used to complete quests and can be used for crafting recipes. Gems come in a variety of different colors, and each one has a Shiny twin as well. Shiny gemstones are rarer than normal ones, but can be sold for a lot more Star Coins. Some gems can only be obtained from certain biomes, but luckily Topaz is easier to get than some.
